Vidal Blanc
Grapes Used: Vidal Blanc ABV: 11.6% Tasting Notes: Vanilla, White Peach, Off Dry Winemaker Notes: Looking for a semi-sweet choice? Vidal blanc is an off dry wine with a little acid, yet remaining crisp. There are notes of vanilla, white peach, and herbs. Drink this refreshing wine while soaking up the sun on a beach or outside on a crisp, sunny, winter mountain day.

Chardonnay
Grapes Used: Chardonnay ABV: 11% Tasting Notes: Green Apple, l Lemongrass, Citrus Winemaker Notes: This medium straw-colored Chardonnay is NOT buttery or creamy. but crisp, with notes of green apple, lemongrass and lime, and some mineral characteristics. It's fermented in a stainless steel tank rather than an oak barrel, which helps retain the grape’s acidity.

Sauvignon Blanc
Grapes Used: Sauvignon Blanc ABV: 11.5% Tasting Notes: Green apple, Slate Winemaker Notes: This high acid Sauvignon Blanc, made in a stainless tank, is a refreshing wine with notes of grapefruit, green apple, and slate. Our sauvignon blanc is high acid but not astringent making it perfect to pair with a light fish such as cod.

Mill Camp Red
Grapes Used: Merlot, Malbec, Cabernet Franc ABV: 13% Tasting Notes: Tobacco, Raspberry, Leather Winemaker Notes: This wine is our field blend. It has a beautiful garnet color made from Merlot, Malbec, Cabernet Franc, and Tannat grapes. On the nose you get notes of Pepper and Cherry but on the palate you get tobacco, raspberry, and leather. It spent two years in barrel which gave it these beautiful characteristics. This light tannin wine is fruit forward and an easy-to-drink red wine that pairs well with steak or blue cheese.

Malbec
Grapes Used: Malbec ABV: 13% Tasting Notes: Chocolate, Pepper, Dark Cherry Winemaker Notes: Malbec is a full bodied, medium tannin wine that spent 2 years in an oak barrel before being bottled. This wine has notes of strawberry, vanilla, and pepper on the nose but on the palate there is chocolate, pepper, and dark cherry. It would pair beautifully with BBQ or a sharp cheese such as Asiago.

Riesling
Grapes Used: Riesling ABV: 10.5% Tasting Notes: Red Grape, Green Apple, Jasmine Winemaker Notes: This off dry wine is an stand out selection that has notes of red grape, green apple, and Jasmine and a contrasting nose of charcoal and honeycomb. A spicy meal would pair well with this wine because the bright acidity and slight sweetness provides a welcomed contrast to the spicy dish.

Traminette
Grapes Used: Traminette ABV: 12.3% Tasting Notes: Honey Suckle, Rose, Pineapple Winemaker Notes: The Traminette grape is closely related to Gerwürztraminer. It has a pale yellow hue with orange, ginger, and floral aromas. On the palate, there are notes of honey suckle, rose, and pineapple. It would pair well with your asian dishes such as a sweet and sour chicken or a stirfry.

High Country Apple
Apples Used: Winter Queen, Stayman Winesap, Virginia Beauty ABV: 6.5% Tasting Notes: Semi-sweet, Crisp, Refreshing Cidermaker Notes: This cider doesn’t get its name for nothin! We use apples grown at 3,300 feet, making this truly "high" country cider. It's crisp and refreshing. Made from a blend of winter variety apples, it's an easy-drinking session cider! It has a beautiful, clear, golden color and is a true, good 'ole apple cider.

Fall Harvest
Apples Used: Macintosh, Maiden’s Blush, Rusty Coat, Wolf River, Gala, and Honey Crisp ABV: 7.7% Tasting Notes: Dry, Tannic, Autumn in a Glass, Muted Watermelon Cidermaker Notes: This Fall Harvest Cider is comprised of fall variety apples. After the apples are pressed, the juice sits on juicy Merlot skins during fermentation giving it a beautiful color while also adding some tannic structure that is not common in ciders.

Apples Used : Redfield Grapes Used: Chardonnay ABV: 8% Tasting Notes: Dry, Sparkling Cidermaker Notes : This co-fermented cider combines 70% Redfield apples with 30% Chardonnay grapes, creating a vibrant expression of fruit and terroir. The natural red flesh of the Redfield apple imparts a striking rosé hue, while bottle conditioning and sur lie aging add depth, texture, and a subtle complexity. The result is a cider that bridges the worlds of cider and wine with elegance and character.

Hopped Winter Queen
Apples Used: Winter Queen, Staymen Winesap, Virginia Beauty ABV: 6.4% Tasting Notes: Dry, Citrus, Acidic Cidermaker Notes: This Cider is a dry cider made primarily from the Winter Queen apple variety. The cider went through a low and slow fermentation process with native yeast plus Citra and Cascade hops. This is the perfect beer drinkers cider.

Cidre D'or (Sparkling Cider)
Apples Used: McIntosh, Maiden's Blush, Rhode Island Greening, Macoun ABV : 7.4% Tasting Notes : Dry, Sparkling Cidermaker Notes : Crafted from a blend of traditional fall apple varieties, this cider reflects the style of those enjoyed in Normandy. Aged sur lie for over two years, it develops depth, complexity, and a touch of rustic funk from the lees present in the bottle. The result is a cider with nuance and character, best appreciated alongside Gruyère cheese for a truly elevated pairing experience.

Cidre Rouge
Apples Used : Fall Varieties ABV: 8.16 Tasting Notes: Tart Cidermaker Notes: Cidre Rouge is crafted from a selection of high-acid fall apple varieties, giving the cider its vibrant tartness and crisp backbone. To add complexity, the cider was rested on freshly pressed Merlot skins, which imparted a gentle tannic structure along with subtle red-fruit nuances. The result is a cider that balances bright apple character with layers of depth
